The olive tree has been a prominent strategic and economic agricultural pillar throughout history. It has been called the "first tree of the Mediterranean" and has held a high place in various civilizations and religions. The exceptional value of olive oil lies in its unique chemical composition, consisting of 97% glycerides coupled with a high percentage of unsaturated fatty acids (especially oleic acid, up to 83%), along with its richness in antioxidants such as vitamins and polyphenols. These properties give it excellent physical characteristics, as well as numerous health and therapeutic benefits, including protecting the cardiovascular system from strokes, lowering cholesterol, boosting immunity, preventing cancer and diabetes, improving digestive health, and combating signs of aging.
